Coconut Milk Malai Giant Prawns

Ingredients: 

  1. Fresh Water giant prawns: 500 gm
  2. Mustered oil: 4 tablespoon
  3. Ghee/ Butter oil: 2 teaspoon
  4. Onion paste: 5 tablespoon 
  5. Ginger paste: 2 teaspoon
  6. Slit green chili: 4 pieces.
  7. Dried red chilies: 3 gm
  8. Red chili powder: 1 teaspoon
  9. Turmeric Powder: 1 teaspoon
  10. Clove powder-Cinnamon powder-Cardamom powder: 1 teaspoon
  11. Whole Clove -Whole Cinnamon -Whole Cardamom: 5 gm
  12. Bay leaves: 2 pieces 
  13. Fresh coriander leaves: 5 gm
  14. Coconut Milk: 3 cups
  15. Salt & Sugar : As per taste                            Coconut Milk Malai Giant Prawns

Processing:

  • At first shell and remove the vein of the prawns but do not remove the head of prawns.
  • Coat prawns with 1 teaspoon salt and 1/2 teaspoon turmeric powder and leave it for 30 minutes.
  • Heat mustered oil in a pan then add the prawns and fry them until it becomes golden in color.
  • After that remove them from the heat immediately and set aside.
  • Now add ghee to the residual oil and add whatever whole spices you have like dried red chilies, bay leaves, cardamom, clove and cinnamon.
  • Add onion paste along with sugar and fry for 5 minutes until onion gets brown.
  • Then add ginger paste and fry another 4 minutes.
  • After which add turmeric and red chili powder and stir it well so that the spices do not stick to the bottom of the pan.
  •  Now add coconut milk, green chilies and salt. And cook for 10 minutes . Once oil started separating from the spices, add fried prawns and cover it. Leave it medium flame for 10 minutes.
  • Sprinkle  Clove powder-Cinnamon powder-Cardamom powder and mix it well.
  • Put off the flame, Now garnish with fresh coriander leaves and serve with steamed rice.

This dish is perfect combination of protein-fat and vitamin-minerals. Prawns is a good source of Selenium which is an effective antioxidants and helps to maintain healthy cell and anti carcinogenic  substance and presence of Phosphorus , Copper, Magnesium helps to maintain bone health. Prawns also provide immunity as it contains good amount of Zinc. Prawns contain anti aging vitamin like Vitamin E . Coconut milk contains medium chain triglycerides which can helps to reduce body weight. Coconut milk contains lauric acid that helps to boost our immune system. Vitamin C, Calcium, Potassium, Magnesium, Iron all are also available in coconut milk which can enhance blood HB level and immunity.
